Four Ways to Make Eggs Portable

Avoid the morning scramble (pun intended) and try out these different options for portable eggs:

Hard Boiled: Prepare a batch the night before, peel them and store in an air-tight container. Season with salt and pepper.

Quiche or Frittata: Bake a quiche or frittata (crustless quiche) on the weekend and have a portable slice every morning of the week. Pack it with your favourite veggies and seasonings to add variety.

Muffin Cups: This is essentially the same concept as a frittata but in mini form! Easily one of the most convenient ways to bring eggs with you wherever you go. Toss them in the microwave before eating!

Poached: Crack an egg in a microwave safe mug or bowl and add ½ cup of water and 1 tbsp white vinegar to it. Cover the mug and cook on high for approximately 1 minute. Use a spoon to check if the egg white has set and once it has, enjoy!
